TLH Chefs Diary

Here in South Devon we have a fabulous larder of regional produce we can use including fresh fish and seafood from Brixham, locally farmed meats and poultry and locally grown fruit and vegetables.

All of our chefs love food and are passionate about using local produce wherever possible.

TLH Recipe of the Month

This month our Derwent Head Chef, Andy Johnston, shares his receipe for Thai Fish Cakes.

Thai Fish Cakes

  • 500g white fish fillet
  • 1/2 red pepper, finely chopped
  • 2 red chillis, finely chopped (use 1 if you don't like things too hot!)
  • 2 tbsp freshly chopped coriander
  • 3 spring onions, chopped
  • 2 cloves garlic, chopped
  • 1 stick of lemon grass chopped
  • 1 tbsp fish sauce or fish stock
  • 1 egg, beaten
  • 125ml coconut milk
  • Vegetable oil for shallow frying

Place the red pepper, chillis, coriander, spring onion, garlic, lemon grass and fish sauce in a food processor and blend to a paste.

Cut the fish into small pieces and add to the mixture. Blend again until the mixture becomes a paste. Add coconut milk and 1 egg. Blend again.

Place mixture in a bowl and chill overnight in a refrigerator, or for at least 2 hours to allow the flavours to develop.

Using a spoon, form the mixture into small fish cakes.

Half fill a heavy based frying pan with the vegetable oil and heat until a cube of bread turns golden in a few seconds. Caution - hot oil can be dangerous so do not leave the pan unattended. Lower the fish cakes a few at a time into the hot oil (this should reach halfway up the side of the fish cakes). Fry until crisp and golden, turning once during cooking. Remove from tha pan and drain on kitchen paper. Repeat until all of the fish cakes are cooked.

Serve with sweet chilli sauce & fine egg noodles.
