A year has passed since our last chefs challenge here at TLH Leisure Resort which meant that our chefs were raring to go for our chefs challenge 2016. Last year we saw great invention with a selection of desserts, two of which made it onto our hotel restaurant menu. This year the challenge brief was slightly different.
Chefs Challenge Brief
With our new BBQ outlet next to our outdoor swimming pool now open during the summer months, our hotel managers asked the chefs to come up with some street food style menu items. Key considerations were:
- High quality
- Easy to serve from our BBQ hut
- Easy to eat on our Aztec Bistro terrace
- Tasty and appealing to customers
- Kept within budget to keep the retail price low
One chef from each of our four hotels put their ideas forward and had the opportunity to impress our judges.
Guest Judges – Academy for Training and Development
On the morning of the chefs challenge 2016, Stuart and Del from Academy Training and Development, Exeter were holding an NVQ training event in our TLH Victoria Hotel. The aim of the event was to allow our staff to learn about NVQ courses that they could complete alongside their day to day work. We have been working with Academy Training and Development for many years and they were more than happy to be our guest judges for the challenge. The also kindly offered a prize to the overall winner – a night’s stay and 3 course meal for 2 at a top Hotel in Exeter.
Ready, Steady, Cook!
All four of our chefs prepared their dishes in the TLH Victoria Hotel and brought them through to the restaurant to be judged. Also on hand to help in the judging (there was no shortage of volunteers) were some of the senior staff from our resort.Judging the Chefs Challenge is a tough job as all four chefs had produced four very tasty yet very different dishes.
Andy, from the TLH Derwent Hotel, produced a fiery tempura battered chicken noodle dish:Rob, from the TLH Toorak Hotel, produced a Mediterranean chicken dish:
George, from the TLH Carlton Hotel, produced a beef meatball and basmati rice dish:
Jamie, from the TLH Victoria Hotel, produced a spicy bean and chicken tortilla dish:
After all four dishes were tasted and analysed by our guest judges, a decision was made. All four chefs returned to the dining room and recieved feedback on their efforts.
It was very close and because of the overall quality of the four dishes, we are planning to use as many as possible in the future. We did however need an overall winner, which after much deliberation, was Rob from the TLH Toorak Hotel with his delicious Mediterranean chicken dish.
