Meet the Chefs of TLH Leisure Resort

The Power of Food 

Food brings people together. We eat to celebrate, for comfort, to learn about other cultures and to pass recipes down through generations of family. As a large resort based in South Devon, we have welcomed Chefs both locally from Torquay and all over the world who bring their skills and knowledge to the kitchens here at TLH Leisure Resort.

Read on to meet a couple of the chefs of team TLH from different parts of the world, but united by a passion for cooking!

Meet the Chefs of TLH Leisure Resort

Andy is Head Chef at the TLH Derwent Hotel and has been with us for over 30 years.

Mint has recently joined us as a chef in the Aztec Bistro, so it was great to hear from two contrasting team members.

We sat down for a chat to discover what inspires them to cook and a few of the things they can’t do without in the kitchen!

Name: Andy

Job: Head Chef at the TLH Derwent Hotel

What inspired you to become a chef?

I was inspired by my father who was a Petty Officer in the Royal Navy who was in charge of a huge team of chefs on an aircraft carrier. It meant I was constantly around lots of cooking growing up!

What is your favourite part of the job?

My favourite aspect of the job is that you get to express your creative side and that you meet so many different people from different backgrounds and countries.

How did you come to work here?

I originally applied to a job advert for Chef De Partie and eventually worked my way up the ladder to become Head Chef!

What is your favourite dish?

It’s hard to pinpoint a favourite, but I absolutely love being able to cook dishes for family and friends.  I love to cook meals from all over the world including Chinese, Indian, Mexican and classic European dishes for example.

Name 3 kitchen utensils you can’t do without?

Obviously a sharp set of knives is a must for any chef, but having been Head Chef of the largest hotel at TLH Leisure Resort, I know how essential having a Rational Oven and Industrial Stick Blender!

Name: Watcharapa – Also known as ‘Mint’

Job: Chef at the Aztec Bistro

What inspired you to become a chef?

My general love for food – preparing it, cooking it, serving it and watching people enjoy my cooking!

What is your favourite part of the job?

I love to work to work in a team that is organised, works well together and with people who are always smiling. In Thailand, we love to smile!

What is your favourite dish?

My favourite dish has to be Pad Kra Pao which is hot, spicy and fragrant.

Name 3 of your favourite ingredients to cook with?

Fresh basil, chilli and pork are some of my favourites! These are the main elements of my favourite dish I’ve mentioned above!
