The Derwent Hotel has a vacancy for two Duty Manager’s, to supervise and co-ordinate the various teams, reporting directly to the Hotel Manager.
As a Kitchen Porter, you will provide support to our committed and professional kitchen teams by washing pots and pans, keeping floors clean, sanitizing food preparation areas and occasionally helping with food prep work.
We are recruiting for a Restaurant Supervisor to bring their energy, personality and great work ethic to our Toorak Hotel restaurant team.

Team Member – Aztec Bistro
As part of the Aztec Bistro Team, you will be working in our popular Aztec Bistro which overlooks both our indoor and outdoor swimming pools, boasting a spacious sun terrace, used for alfresco dining and seasonal entertainment.
Night Porter Supervisor
As a Night Porter Supervisor you will be a vital part of the team as you respond to guests’ needs while also doing regular checks to ensure the safety of the building, guests and team members.
Trainee Commis Chef
As a Trainee Commis Chef with a passion for cooking you will work within a professional team of Chefs in the Toorak Hotel Kitchen. No experience is necessary as training will be given. You will be working alongside our Head Chef who is passionate about the development of staff giving you the opportunity to flourish and reach your potential.
Cleaner – Aztec Bistro
As a Cleaner in Aztec Bistro you will provide a high level of cleaning ensuring the Bistro is beautifully presented for our guests and customers.
As a Kitchen Assistant, you will provide support to our committed and professional team of colleagues in The Derwent Hotel Kitchen providing efficient and professional fast-paced service to large group bookings and private guests.
Chef – Aztec Bistro
The Aztec Bistro sits in the heart of TLH Leisure Resort. It is a popular destination for hotel guests, Aztec Club members and locals alike. It has a distinctive Aztec Theme and overlooks both our Aztec indoor and outdoor swimming pools. Boasting a spacious sun terrace, used for al fresco dining and seasonal entertainment, our Aztec Bistro has a unique holiday atmosphere all year round. Open throughout the day and evening the Aztec Bistro, has an established menu, which includes char grill items, steaks and fresh fish, as well as lighter bites, snacks and sandwiches, locally sourced where possible.
Beauty Therapist – Aztec Spa
As a Beauty Therapist, you will be responsible for providing and delivering exceptional customer care and outstanding service within a relaxing environment where guests feel refreshed and revived and look forward to repeating the experience.
As a Commis Chef, you will work alongside the Head Chefs and will have good basic Chef Skills and enjoy working in the kitchen environment with the willingness to improve. This role is perfect for an aspiring Chef as learning and development opportunities will be offered to help the right candidate work well in either the TLH Victoria or Toorak Kitchen creating a relaxing environment for our guests, leaving them feeling relaxed and revived and excited to repeat the experience.
Group Bookings Administrator
We are looking for a Group Bookings Administrator who is a customer service superstar with excellent communication and organisational skills.
Short Order Chef
As a Short Order Chef, you will join our friendly and professional team at TLH Victoria Hotel you will take responsibility for food orders throughout the day as they come in from Aztec games and Alberts. Working closely with the rest of the team you will prepare delicious food in a timely manner.
We are recruiting for a skilled and motivated decorator who will be responsible for room refurbishments as well as a busy schedule of general Resort improvements and maintenance, The right candidate will join an experienced team and must have a keen eye for detail, maintain clean and organised working practices and will be capable of working autonomously; ensuring work carried out is to a high standard.
Assistant Restaurant Manager
We currently have an exciting opportunity for a full time Assistant Restaurant Manager. We are looking for a dynamic and energetic individual who has a passion for providing an excellent service and can help to maintain the standards of the TLH Victoria Hotel.
As a Bar Tender you will serve in our TLH Victoria Hotel bar. A sociable and fun role, where you will be able to impact a guest’s experience, whether by making their favourite drink just how they like it, making conversation and asking about their day, or simply by providing great service with a smile creating a relaxing environment for our guests, leaving them feeling refreshed and excited to repeat the experience.
As a Hotel Receptionist, you will be responsible for providing exceptional front-of-house service with a high level of courtesy and professionalism within a relaxing environment where guests feel refreshed and revived and look forward to repeating the holiday experience.
As a Hotel Porter, you will work closely with the Operational Manager to deliver excellent service to our Hotel Guests and organisers of conferences and events, within the Hotel setting.
As waiting staff you will bring energy, personality and great work ethic to our hotel restaurants. This is a sociable role where guests and colleagues will appreciate when you deliver great service with a smile! Greeting and serving guests, you’ll soon build a rapport and love catching up with them each day. As each service ends, great teamwork, pride in your surroundings and attention to detail will ensure our restaurants are cleaned, re-set and ready to go again.
Senior Lifeguard/Duty Manager
As a Duty Manager you will manage the lifeguarding team on a daily basis, supervise pool activities, provide first aid when required and participate in the cleaning programme.
